• For the Cake:
- 4 large eggs
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup powdered sugar (for dusting)
• For the Filling:
- 1 cup whipped cream
- 1 cup fresh strawberries, sliced (plus extra for garnish)
Instructions
- Preheat the oven to 375°F (190°C). Line a 10×15-inch jelly roll pan with parchment paper, making sure it is well covered.
- Beat the eggs, granulated sugar, and vanilla extract in a large mixing bowl until light and fluffy. This should take about 5 minutes.
- Sift together the flour, baking powder, and salt in a separate bowl. Gently fold the dry ingredients into the egg mixture until combined, being careful not to deflate the fluffy batter.
- Pour the batter into the prepared jelly roll pan and spread it evenly. Bake for 10-12 minutes, or until the cake springs back when lightly touched.
- Once baked, remove from the oven and sprinkle powdered sugar on top of the cake. Immediately invert the cake onto a clean kitchen towel and carefully peel off the parchment paper. Roll the cake up with the towel from one short end to the other. Allow the cake to cool completely in this rolled form.
- Unroll the cake gently, then spread the whipped cream over the surface, ensuring even coverage. Top with the sliced strawberries.
- Roll the cake back up, this time without the towel. Place the cake seam-side down and chill in the refrigerator for at least 1 hour to set.
- After chilling, slice and serve! Garnish with extra strawberries on top for a festive, colorful touch. 🍓🎉
