Ingredients

  • 1 cup sugar
  • 2 drops lavender extract (or 1 tablespoon dried lavender or 10 sprigs fresh lavender)
  • 1 cup lemon juice (approximately 6 medium lemons)
  • 3 cups cold sparkling water
  • 1 drop purple food coloring (optional)

Instructions

  1. Create a simple syrup by combining water and sugar in a small saucepan. If using fresh or dried lavender, add it at this stage.
  2. Bring to a gentle simmer and cook, stirring occasionally until sugar completely dissolves. Allow to cool to room temperature.
  3. If using plant material, strain the lavender from the syrup using a fine-mesh strainer.
  4. In a 1-quart pitcher, combine lemon juice, prepared simple syrup, and water. If using extract, add 2 drops of lavender oil at this point.
  5. Add food coloring if desired for visual enhancement.
  6. Serve over ice with fresh lemon slices for a beautiful presentation.
