Ingredients

1 lb. medium raw shrimp, peeled and deveined

1/4 cup finely chopped shallots

2 Tbsp. extra-virgin olive oil, divided

1 tsp. chipotle chili powder (or mix of chili powder and pinch of cayenne)

1 tsp. smoked paprika

3/4 tsp. ground cumin

1/2 tsp. garlic powder

1/2 tsp. kosher salt

1/4 cup sour cream (or plain whole-milk Greek yogurt)

1 Tbsp. fresh lime juice

12 Tbsp. finely chopped fresh cilantro

8 corn or flour tortillas, warmed

Avocado-Mango Salsa:

1 medium ripe avocado, diced

1 medium ripe mango, diced

1 small or 1/2 large fresh jalapeño, seeds and ribs removed, finely diced

2 Tbsp. finely chopped fresh cilantro

Zest and juice of 1 lime


Instructions

  1. Pat shrimp dry and place in a large bowl. Add 1 Tbsp. olive oil, shallots, chipotle powder, paprika, cumin, garlic powder, and salt. Toss to coat. Let marinate 10 minutes.
  2. Prepare Avocado-Mango Salsa by combining mango, avocado, jalapeño, cilantro, lime zest and juice. Mix well and season with salt.
  3. Heat remaining 1 Tbsp. oil in a large skillet over medium-high. Add shrimp in a single layer and sauté 2–3 minutes per side, until no longer opaque. Transfer to a clean plate and remove tails.
  4. Prepare lime crema by stirring together sour cream, lime juice, and cilantro in a small bowl.
  5. Spread crema on warm tortillas, top with chipotle shrimp, spoon over salsa, and finish with more crema and cilantro if desired.

Notes

Shrimp cooks fast—don’t overcook or it will turn rubbery.

Use Greek yogurt instead of sour cream for a lighter option.

Avocado and mango should be ripe but still slightly firm for best texture.

Crema, salsa, and shrimp can be prepped ahead separately for quick assembly later.

If tortillas start to break, warm them briefly in a skillet or microwave wrapped in a damp towel.
