For the Bowl:

  • 7 frozen shrimp
  • 1/2 cup jasmine rice
  • 1/4 cup pickled onions
  • 1/4 cup shredded carrots
  • 1/4 cup cucumber, sliced
  • 1 tbsp fresh cilantro, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp olive oil
  • 1/2 tsp sea salt and pepper, to taste

For the Spicy Mayo:

  • 1/4 cup avocado oil mayo
  • 1 1/2 tbsp sriracha
  • 1/2 lemon, juiced
  • 1 tsp honey
  • 1/4 tsp sea salt

Instructions

  1. Heat olive oil in a pan over medium heat. Add shrimp, season with salt and pepper, and cook until pink and fully cooked through, about 2-3 minutes per side.
  2. Prepare jasmine rice according to package instructions. For ultimate convenience, use frozen rice that only needs reheating!
  3. In a small bowl, combine mayo, sriracha, honey, lemon juice, and sea salt. Mix thoroughly until smooth and set aside.
  4. Assemble your bowl by placing jasmine rice as the base, then arranging the shredded carrots, cucumber slices, pickled onions, and sautéed shrimp on top.
  5. Sprinkle with fresh cilantro and parsley for bright flavor and color.
  6. Drizzle generously with your homemade spicy mayo sauce.
  7. Enjoy immediately while the shrimp is still warm!
