For the Vanilla Crust:

  • ¾ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • 3 ounces dry instant vanilla pudding mix
  • 3 tablespoons butter, melted
  • 1 large egg
  • ½ cup milk

For the Filling:

  • 14.5 ounces canned sliced peaches
  • 8 ounces cream cheese, room temperature
  • ½ cup granulated sugar
  • 3 tablespoons reserved peach juice

For the Cinnamon Sugar Topping:

  • 1½ tablespoons granulated sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F. Lightly grease a 9-inch pie plate.
  2. Drain the canned peaches in a strainer set over a bowl to collect the juice. Set aside both the peaches and the reserved juice.
  3. In a large mixing bowl, whisk together the flour, baking powder, salt, and dry vanilla pudding mix.
  4. Add the melted butter, egg, and milk to the dry ingredients. Beat for about 2 minutes until the mixture is smooth and well combined.
  5. Pour the crust mixture into your prepared pie plate, spreading it evenly across the bottom.
  6. Arrange the drained peach slices in a single layer over the crust.
  7. In a medium bowl, beat together the softened cream cheese, sugar, and 3 tablespoons of the reserved peach juice until smooth and creamy. Spread this mixture over the peaches, coming to within an inch of the edge of the pie plate.
  8. In a small bowl, combine the cinnamon and sugar. Sprinkle this mixture evenly over the top of the pie.
  9. Bake for 30 minutes, until the edges are golden and the center is set.
  10. Allow the pie to cool completely before slicing and serving.

Notes

  • For best results, make sure your cream cheese is truly at room temperature before mixing.
  • You can use a larger 29-ounce can of peaches for a more fruit-filled pie.
  • Store leftover pie covered in the refrigerator for up to 5 days.
  • Delicious served at room temperature or chilled.
