Description

No-Bake Lemon Icebox Pie is an easy, creamy dessert with sweetened condensed milk, cream cheese, and fresh lemon juice in a graham cracker crust. Perfect make-ahead treat!


Ingredients

1 (9″) graham cracker crust

8 oz. cream cheese (room temperature)

1 (14 oz.) can sweetened condensed milk

½ cup fresh lemon juice

Zest of two lemons

Whipped cream or cool whip (for topping)


Instructions

  1.  Place the cream cheese into a mixing bowl and use an electric mixer to blend until smooth and creamy.
  2. Add the sweetened condensed milk, lemon juice, and lemon zest. Blend until fully incorporated and smooth.
  3. Pour the mixture into the pre-made graham cracker crust and smooth the top with a spatula.
  4. Chill in the refrigerator for at least 2 hours or until firm.
  5.  Top with whipped cream or cool whip.
  6. Serve ice cold directly from the fridge.

Notes

Fat-free cream cheese can be substituted for full-fat to achieve a sherbet-like texture.

Use bottled lemon juice if fresh lemons are unavailable—taste difference is minimal.

Make ahead up to 2 days and store covered in the refrigerator.

Pie can be frozen for up to 3 months.
