Ingredients
For the Cupcakes:
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, softened 🧈

- 1 cup buttermilk
- 1 tsp vanilla extract

- 3–4 cups powdered sugar
- 2–3 tbsp milk or heavy cream
- 1 tsp vanilla extract
- Food coloring (optional) 🌈

Instructions
For the Cupcakes:
1️⃣ Preheat Your Oven
Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners. 🧁
2️⃣ Mix Dry Ingredients
In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
3️⃣ Cream Butter and Sugar
In a large bowl, cream the softened butter until smooth. Gradually add sugar, beating until light and fluffy.
4️⃣ Add Eggs and Vanilla
Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
5️⃣ Combine Dry and Wet Ingredients
Slowly add the dry ingredients and buttermilk in batches, starting and ending with the dry ingredients. Mix until just combined.
6️⃣ Fold in M&M’s
Gently fold in the mini M&M’s for that fun, colorful crunch! 🍬
7️⃣ Fill the Liners
Divide the batter evenly among the cupcake liners, filling each about ¾ full.
8️⃣ Bake
Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
For the Buttercream Frosting:
1️⃣ Beat the Butter
In a large bowl, beat the softened butter until creamy and smooth.
2️⃣ Add Powdered Sugar
Gradually add powdered sugar, one cup at a time, beating thoroughly after each addition until the desired consistency is reached.
3️⃣ Mix in Milk and Vanilla
Add milk (or cream) and vanilla extract, and mix until the frosting is light and fluffy. If you want a colorful touch, add food coloring. 🌈
4️⃣ Frost the Cupcakes
Once the cupcakes are fully cooled, frost them with your desired amount of frosting using a piping bag or a knife.
Notes
- For a Richer Flavor: If you’d like a richer flavor, try using sour cream or Greek yogurt instead of buttermilk. This will add extra moisture and a slight tang to balance the sweetness of the cupcakes.
- M&M’s Size Matters: When adding the mini M&M’s to the batter, be sure to gently fold them in so they don’t break apart. If using regular-sized M&M’s, chop them into smaller pieces to make sure they distribute evenly throughout the batter.
