Ingredients
For the Frappe:
• 1 cup frozen dragonfruit cubes (pitaya)
• 1 cup frozen strawberries
• 1 cup coconut milk (or any milk of your choice)
• ½ cup vanilla Greek yogurt
• 1 tablespoon honey or agave syrup
• 1 cup ice cubes
For the Swirl:
• ½ cup strawberry puree (from fresh or frozen strawberries)
• 1 teaspoon sugar (optional)
• 1 tablespoon lemon juice
Toppings:
• Whipped cream
• Fresh dragonfruit slices or strawberry halves
• Optional: chia seeds or edible glitter for a bit of sparkle
Instructions
• Heat the strawberry puree, sugar (if using), and lemon juice in a small saucepan over medium heat.
• Cook for 3-5 minutes until slightly thickened. Then, remove from heat and let it cool completely.
• In a blender, combine the frozen dragonfruit, frozen strawberries, coconut milk, vanilla Greek yogurt, honey, and ice cubes.
• Blend until smooth and creamy. Taste and adjust the sweetness with a little more honey if desired!
• Drizzle the cooled strawberry swirl mixture around the inside of two tall glasses, allowing it to coat the sides for a beautiful, vibrant swirl effect.
• Pour the dragonfruit-strawberry frappe into the prepared glasses.
• Gently swirl to mix the strawberry swirl with the frappe, creating a colorful, tropical look.
