For the Cilantro Yogurt Ranch Sauce:

  • ¼ cup Greek yogurt
  • ¼ cup light ranch dressing
  • 1 tablespoon fresh cilantro, minced
  • Salt and pepper to taste

For the Burritos:

  • 4 medium flour tortillas
  • 2 cups cooked seasoned chicken, chopped or shredded
  • 1 ripe avocado, peeled, pitted and sliced
  • 1 large tomato, sliced
  • ¼ cup shredded cheddar or mozzarella cheese

Instructions

  1. In a small bowl, combine Greek yogurt, ranch dressing, minced cilantro, salt, and pepper. Mix well until fully incorporated and set aside.
  2. Place tortillas on a clean work surface. Divide the chicken evenly among the four tortillas, arranging it in the center of each.
  3. Top each portion of chicken with avocado slices, tomato slices, and a sprinkle of shredded cheese.
  4. Drizzle 2-3 tablespoons of the cilantro yogurt ranch sauce over each assembled burrito.
  5. Fold in the sides of the tortillas and roll tightly to form burritos. Secure with toothpicks if necessary.
  6. Optional: Heat a skillet over medium-low heat and lightly toast the wrapped burritos for 1-2 minutes per side until golden.
  7. Serve immediately and enjoy!

  • Use rotisserie chicken or leftover cooked chicken for a quicker preparation.
