Ingredients
For the Chicken:
- 1.3 lbs (600g) chicken breasts, cut into 1.5-inch cubes
- 8–10 wooden skewers
- 1 large red bell pepper, cut into chunks
- 1 large yellow bell pepper, cut into chunks
- 1 medium red onion, cut into quarters
- 1 cup cherry tomatoes (optional)
For the Mediterranean Marinade:
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 2 garlic cloves, minced
- 1 teaspoon sweet paprika
- 1 teaspoon dried oregano
- 1 teaspoon honey
- 3/4 teaspoon kosher salt
- 1/2 teaspoon black pepper
Instructions
- Soak: Place wooden skewers in water for at least 30 minutes while you prepare the other ingredients.
- Marinade Magic: In a large mixing bowl, whisk together olive oil, lemon juice, minced garlic, paprika, oregano, honey, salt, and pepper until well combined.
- Marinate: Add cubed chicken to the marinade and toss until every piece is well coated. Cover and refrigerate for at least 1 hour, or overnight for maximum flavor.
- Assemble: Thread marinated chicken alternately with bell pepper chunks, red onion pieces, and cherry tomatoes onto soaked skewers, creating colorful patterns.
- Grill: Preheat grill to medium heat (about 375°F). Cook skewers for 12-15 minutes, turning every 3-4 minutes, until chicken reaches internal temperature of 165°F and has beautiful char marks.
