Ingredients
For the Meatloaf:
- 2 lbs ground beef
- 2 eggs
- 1 cup breadcrumbs
- ½ cup milk
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 cup mushrooms, chopped
- ½ cup cooked bacon, crumbled
- 1½ cups shredded Swiss cheese
For the Glaze:
- ¼ cup ketchup
- 2 tbsp brown sugar
- 1 tbsp Dijon mustard
Instructions
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Grease a loaf pan or line it with parchment paper.
- Cook the Mushrooms:
- In a skillet over medium heat, cook the chopped mushrooms until they are soft, about 5 minutes.
- Let the mushrooms cool.
- Mix the Meatloaf:
- In a large bowl, combine the ground beef, eggs, breadcrumbs, milk, salt, pepper, garlic powder, and onion powder.
- Add the cooked mushrooms, crumbled bacon, and 1 cup of shredded Swiss cheese.
- Mix everything together until well combined.
- Shape and Glaze:
- Place the meat mixture into the prepared loaf pan and shape it into a loaf.
- In a small bowl, mix together the ketchup, brown sugar, and Dijon mustard.
- Spread the glaze evenly over the top of the meatloaf.
- Bake:
- Bake the meatloaf in the preheated oven for 50–60 minutes, or until the inside reaches 160°F (70°C).
- About 10 minutes before it’s done, sprinkle the remaining ½ cup of Swiss cheese on top.
- Return to the oven and bake until the cheese is melted.
- Rest and Serve:
- Let the meatloaf rest for 10 minutes before slicing. This helps keep it juicy.
- Serve warm with mashed potatoes or your favorite vegetables.
